Na the difference is ability to fill in. Backup goalies/systems don't have that loss/risk.

I think all of the other goalies and the security of knowing everytime Bishop misses time you aren't screwed for that week is worth something. For a rebuilding team moving away from Luongo probably makes sense, but that is currently one of the best systems.
